Coming from Jaletanego in Chiapas, Mexico, this lot is the joint effort of various smallholder farms. Grown at 1,300 – 1800 MASL, this creates a complex acidity of fresh blood orange, and intense brown sugar sweetness.
Typica, Bourbon, Caturra, and Marsellesa make up the majority of this lot to create a highly uniform lot with a beautiful raw cacao finish. Processed as a washed fermentation, the coffee has a clean and sweet profile, making it perfect for various applications; from single-origin espresso, to filter, to blend component, this coffee is extremely versatile.
