Coffee is Chiapa's most important commercial crop and has a long history in the region. The first crop was introduced in 1846 by Jeronimo Manchinelli, who brought seedlings from Guatemala to many farmers followed and coffee growing spread, becoming a significant source of income for small producers. San Cristobal de las Casas improved their processing over the years which resulted high-quality coffee, with delicious notes of caramel, nut, and chocolate.
Producers here have learned how to process their coffee to ensure quality. Only the best cherries are selected for the specialty market. After depulping the coffee ferments for 12 to 17 hours before being washed and dried on small drying patios next to farmers’ homes.
San Cristóbal de las Casas is a colorful town with magic in every corner. It is considered a cultural capital and is one of the most important tourist destinations in the region.
